The formula
Grams = cups x grams per cup for that ingredient (for example flour 125 g, sugar 200 g, butter 227 g).
Why you cannot convert cups to grams in one step
A cup measures volume, but a gram measures weight. A cup of honey is almost three times heavier than a cup of oats, because they are different densities. So every ingredient has its own number of grams per cup.
Common ingredients (US cup, 237 ml)
| Ingredient | 1 cup in grams |
|---|---|
| Water or milk | 237 |
| All-purpose flour | 125 |
| Granulated sugar | 200 |
| Brown sugar (packed) | 213 |
| Powdered sugar | 120 |
| Butter | 227 |
| Uncooked rice | 185 |
| Rolled oats | 90 |
| Cocoa powder | 85 |
Why weighing beats measuring
How you fill a cup changes the weight a lot. Scooping flour straight from the bag can pack in 20 to 25 percent more than spooning it in and levelling. A cheap kitchen scale gives more consistent baking, which is why most professional recipes use grams.
